Serengeti Ostrich

Ingredients:

200g Ostrich Fillet Medallions
400g mixed Berries
500g Pride Super Maize meal
lt Marula Jelly

Garnish:

Ground Cumen and Cumen Seeds

Method:

– Grill ostrich for 20-25 min on a high heat grill
– Puree (Blend) mixed berries with marula to add flavour
– Place Pride Super Maize meal in boiling water on stove for 15 minutes
– Flatten Pride Super Maize meal and place it on the grill until each side is char-grilled
– Let ostrich soak in sauce of marula jelly and cumen seeds, then rub grounded cumen over meat
