Pea and Bacon Soup

Ingredients:

250g Pride Green Split Peas
300ml Fresh Cream
250ml Vegetable Stock
250g back Bacon, cubed and fried
Salt
Pepper
Mixed Herbs

Method:

– Wash the Pride peas but do not soak
– Add three cups of water to one cup of Pride peas
– Bring to the boil, reduce heat and simmer for 30 minutes
– Mash the Pride peas, add cream, vegetable stock, salt, pepper, herbs and fried bacon
– Simmer for another 15 min to develop flavour
– Garnish with herbs and serve
